Italian Chicken Rice
Ingredients
12 oz. Chicken breast chunks
½ cup chopped onion
1 cup chicken broth
1 can diced tomatoes (optional)
1 ½ cups instant brown rice
1 can green beans
1/8 teaspoon garlic powder
1 tablespoon cilantro
2 pinches basil
Directions
Spray skillet with cooking spray. Fry chicken and onion for 3 minutes. Stir in chicken broth, tomatoes and
spices. Set to boil on low fire, stir in rice and beans. Simmer for 5 minutes. Remove from stove and let it
stand for 3 minutes covered. Serve with grated parmesan cheese.
